These soups special processing is very fast, almost not cooking anything, but to really cold delicious new addition; it is extremely relevant in the current hot weather.
- ½ cucumbers chopped
- 1 avocado, peeled and seeded
- 2 tablespoons unsweetened yogurt
- 2 tablespoons mint leaves
- 4 tablespoons of lemon juice
- 1 ½ tablespoons of salt and pepper
- 1 sliced beet (used for decoration)
The steps are:
Cucumber, avocado, yogurt, mint, lemon juice, salt and pepper and 1 cup cold water in a blender. Press purees the ingredients.
Pour the soup into the bowl in the refrigerator for about 1 hour.
Remove the soup cold with a few mint leaves and slicedbeets decoration above.
